Lonzino is a traditional cured meat, made from the pork loin. It is seasoned with salt and spices, then aged for several weeks, developing a delicate and aromatic flavor. Compared to other cured meats, it's lean, as it comes from a part of the pig that has little fat, and has a firm texture. Often served as an appetizer, it’s thinly sliced and enjoyed with bread, cheese, and paired with local wines.
